De tai chanh, a famous specialty from Ninh Binh, Vietnam, has recently been recognized by the globally renowned culinary website Taste Atlas.
Listed among the best goat dishes in the world, de tai chanh is described as a "traditional specialty of Ninh Binh" by Taste Atlas.
"In this dish, the goat meat is lightly cooked using lime juice. Other ingredients include chili, lime leaves, garlic, black pepper, and sesame seeds. The meat must be thinly sliced and fresh to retain its natural sweetness.
De tai chanh is usually served with pickled figs, pickled green bananas, and soy sauce for dipping," Taste Atlas stated.
According to locals, the unique flavor of Ninh Binh’s mountain goat meat lies in the way the animals are raised.
Goats are not confined to pens but are allowed to roam freely in the mountains, feeding on natural grasses and herbs. This results in firm, fragrant meat that is noticeably different from pen-raised goats.
In addition to de tai chanh, Ninh Binh’s goat meat can be used to prepare up to 20 different dishes, including sour hotpot, soup, stir-fry with lemongrass and chili, grilled, blood pudding, pan-seared, stewed, steamed, and hotpot.
Founded in 2015 and headquartered in Zagreb, Croatia, Taste Atlas is known as a culinary map compiling traditional dishes from around the world.
According to founder Matija Babic, Taste Atlas rankings are based on expert opinions and food critic reviews to ensure credibility and reliability.
