Phan Thiet, located in Binh Thuan province, is not only a renowned coastal getaway with breathtaking scenery but also a culinary haven, especially famous for its fresh and diverse seafood.
Visitors to Phan Thiet often indulge in iconic squid-based dishes such as grilled squid rolls or sun-dried squid. Among the local street food highlights is an unexpected dish made from squid: squid teeth.
Named for their appearance, squid teeth are actually the round muscle cluster found at the head of the squid, hidden among its tentacles. These ivory-white morsels are encased in a thin layer of flesh and contain two hard inner shells.

Previously overlooked during squid preparation, squid teeth have since gained popularity thanks to the creativity of local residents, becoming a signature street food loved by both locals and tourists.
"Fishing is a way of life here, and locals have learned not to waste any part of the catch. Squid teeth were once discarded but are now turned into delicious dishes," shared Thuy Loan, owner of a popular squid snack shop in Phan Thiet.
According to her, squid teeth can be made into various dishes such as squid tooth patties, salads, boiled or deep-fried squid teeth. Still, the grilled version remains the most popular.
“Depending on their size, we make different dishes. Small ones are great for curry or patties. Medium-sized ones are perfect for garlic butter stir-fry. The large ones are best grilled or deep-fried,” she added.

After removing the hard inner shell, the squid teeth are washed thoroughly, sometimes with diluted lemon juice or saltwater to eliminate odor and maintain their natural whiteness and crunch.
To make the grilled version, the squid teeth are marinated in a savory blend of lemongrass, garlic, and chili for several hours before being skewered and grilled slowly over charcoal, turned regularly to ensure even cooking. They’re typically served with pickled vegetables, Vietnamese coriander, and a unique dipping sauce depending on the vendor.
The result is a flavorful snack with a rich aroma, chewy yet crunchy texture, and a spicy kick that leaves a lasting impression.
To try this coastal specialty, visitors can head to the seafood eateries along the Ca Ty River embankment, Nguyen Tat Thanh Street leading to Doi Duong beach, or the night food stalls on Vo Thi Sau Street in Phan Thiet.
